Many of you have asked for more Vegan Recipes, so I combed through my blog and compiled a list of our 40 BEST Vegan Dinners! These vibrant, plant-based recipes are full of flavor and feature fresh seasonal produce most prominently. Consider what is in season in your neck of the woods and pick out a few to try this week! Tell us your favorites in the comments below!
It turns out, I have about 400 vegan recipes (or vegan-adaptable recipes) on the blog– which honestly, totally surprised me – because that is about half of my recipes! Some are vegetarian recipes that can be easily adapted. I sorted through them all and found your favorites, and included some of mine too! Our Best Vegan Recipes: Vegan Broccoli Mac and Cheese
This recipe for Vegan Broccoli Mac and Cheese is one of our weeknight “go-to” vegan meals! It’s super easy, healthy and delicious. Top it with vegan cheesy Sprinkle.

Ingredients
- 5–6 ounces dry pasta- fettucine, linguini, orechiette, etc.
- 3 cups fresh broccoli, steamed
Vegan Mac & Cheese Sauce:
- 1–2 tablespoons olive oil
- 1/2 white onion
- 4 fat garlic cloves
- 1/2 cup raw cashews, soaked (or hemp seeds) see notes
- 1 cup veggie broth (or 1 cup water and boulllion)
- 1–2 tablespoons nutritional yeast
- 1 teaspoon white miso paste
- 1 teaspoon dijon mustard
- 1/2 teaspoon salt
Sprinkle with Vegan Cheesy Sprinkle
Instructions
- Cook Pasta: Set salted water to boil in a large pot and cook pasta according to directions. During the last 2-3 minutes, add the broccoli to the pasta, and cook for few minutes until tender. Drain.
- Make the Vegan Mac and Cheese Sauce: Heat oil over med-low heat, and saute onion and garlic until tender and golden. Place it in a blender along with cashews, veggie broth, nutritional yeast, miso, mustard salt. Blend until creamy and smooth.
- Combine: Drain the pasta and broccoli, and toss with the Vegan Mac and Cheese Sauce and toss, and gently warm over low heat.
- Divide among bowls.
- Garnish with optional Vegan Cheesy Sprinkle.
Notes

My partner and I have greatly enjoyed cooking the meals listed on “40 Mouthwatering Vegan Dinner Recipes”. So far we’ve cooked 10, and they are all fantastic! If these recipes were available in a book, I would definitely buy it.
A few comments: 1) It would be nice if the measurements were also in the instructions. It’s a bit difficult to scroll up and down while trying to cook. 2) Generally, the prep time is way underestimated for an amateur cook. 3) It would be nice if there was a table of contents with hotlinks to more easily access recipes in a given section.
