Tofu Shawarma Ingredients

  • Tofu: Use extra firm tofu for the best texture. It contains less moisture and holds together beautifully when sliced and pan-seared.
  • Shawarma spice blend: Make our easy homemade Shawarma Spice, or simply use store-bought. Our blend is made with cumin, coriander, turmeric, garlic powder, ginger, allspice or cardamom, cayenne, and salt - spices you likely already have on hand!
  • Potato starch or cornstarch: A small amount helps the spices adhere to the tofu, and it helps the tofu develop a crispy, golden-brown crust.
  • Oil: Coconut oil or avocado oil do best with high heat, which helps achieve a nice crust on the tofu.
  • Basmati rice or quinoa: Creates a hearty base for the bowls. Fragrant basmati rice is especially delicious with the shawarma spices, while quinoa adds a nutty flavor and a little extra protein. Brown rice or couscous would work well, too!
  • Tomatoes or cherry tomatoes: Add juicy sweetness and acidity that balances the warm spices.
  • Pickled onions: Their bright, tangy bite cuts through the richness of the tofu and creamy sauce for flavor balance. They’re an easy component to make ahead and keep in the fridge.
  • Cucumber slices: Cool, crisp cucumber provides a refreshing contrast to the warm, spiced tofu. Persian or English cucumbers are especially nice because of their thin skins and fewer seeds.
  • Fresh herbs: Use mint, dill, or basil, or a combination for fresh, herby flavor.
  • Tahini sauce: Creamy, nutty tahini sauce ties everything together. Tzatziki, zhoug, or hummus are delicious alternatives.
  • Garnish: Finish with Aleppo pepper or cracked black pepper and a squeeze of fresh lemon juice.

How to Make Tofu Shawarma Bowls

1. Slice and season the tofu. Drain the tofu and pat dry, applying some gentle pressure to release excess liquid. Slice into 1/4-inch slabs. On a plate, combine the Shawarma spice blend (cumin, coriander, turmeric, garlic, ginger, allspice, cayenne, salt, and pepper) with the potato starch or cornstarch. Coat each side of tofu with the spice mixture on both sides, pressing gently so the spices adhere.

Alternatively, you can arrange the tofu on a sheet pan and sift the spice mixture over top before flipping and repeating on the other side.

2. Pan-sear the tofu. Add oil to a large skillet and bring to medium heat. Sear the tofu until golden brown, about 5 minutes, then repeat on the other side. Do not fiddle with the tofu while it sears to ensure it develops a good crust. When ready, it will naturally release from the pan.

3. Assemble the Tofu Shawarma Bowls. Divide the rice among four bowls, and top with sliced cucumber, tomatoes, pickled onions, and tofu slices. Drizzle with tahini sauce (or tzatziki, tahini yogurt sauce, zhoug, zhoug yogurt, and/or hummus). Sprinkle with cracked pepper or Aleppo and add a squeeze of fresh lemon juice.

Chef’s Tips

  1. Dry the tofu well. A dry surface = a better crust.
  2. Slice it ⅛-¼ inch thick. Thinner slices are chewier and crispier; slightly thicker slices stay tender inside.
  3. Give it room in the pan. Cook in batches rather than crowding the skillet.
  4. Don't fiddle with it! Let the tofu sear undisturbed until deeply golden. Once a good crust develops, it will release more easily from the pan.

Serving Suggestions & Variations

  • Turn it into a wrap: Tuck the shawarma tofu, veggies, pickled onions, and tahini sauce into warm pita or flatbread with shredded romaine or cabbage.
  • Make it a salad: Skip the rice and serve everything over romaine, arugula, or mixed greens. Crispy chickpeas make a delicious addition.
  • Make it grain-free: Serve over greens instead of rice.
  • Add more protein: Add crispy chickpeas or hummus.
  • Switch up the grain: Try quinoa, brown rice, or couscous.

Meal Prep & Storage

Meal prep: At the beginning of the week, cook the rice or quinoa, pan-sear the tofu, make the pickled onions, and make the sauce. You can even wash and prep the vegetables ahead of time. This makes it easy to assemble the bowls as needed throughout the week.

Storage: Store leftover tofu in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet or in an air fryer. Store the other bowl components separately.

Shawarma spice blend (or use 2 tablespoons store-bought shawarma blend)

  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder or granules
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon allspice or cardamom
  • 1/8 teaspoon cayenne
  • 1/2 teaspoon salt
  • black pepper to taste
  • 2 tablespoons potato starch or cornstarch (use flour in a pinch)

Shawarma Bowl Ingredients

  • 3 cups cooked basmati rice or quinoa
  • 1 1/2 cups tomatoes or cherry tomatoes, cut into bite-sized pieces
  • 1/2 cup pickled onions or red onion
  • 1 large cucumber, sliced
  • 1/2 cup fresh herbs: mint, dill, or basil
  • Tahini Sauce for drizzling

Instructions

  1. Prepare the Tofu. Slice the tofu into ¼-inch slabs and pat dry. Combine the cumin, coriander, turmeric, garlic, ginger, allspice, cayenne, salt, pepper, and potato starch (or cornstarch) on a plate. Coat each slice of tofu generously with the spice mixture on both sides, pressing gently so the spices adhere. (Alternatively: Arrange the tofu on a sheet pan and sift the spice mixture evenly over the top. Turn the tofu and repeat on the other side.)
  2. Sear Tofu. Heat oil in a large skillet over medium heat. Sear tofu until golden brown, over medium heat, about 5 minutes each side- do not fiddle with it; let it develop a crust. It will release itself from the pan once browned.
  3. Assemble Bowls. Divide the rice among four bowls, top with sliced cucumber, tomato, pickled onions, slices of tofu, and drizzle with tahini sauce (or tzatziki, tahini yogurt saucezhoug, zhoug yogurt, hummus). Sprinkle with fresh cracked pepper or Aleppo Chili Flakes.

Notes

Potato starch (or cornstarch) enhances the spices to create more of a crust on the tofu. It will still be nicely seasoned if you choose to omit it.

Store leftover tofu in a sealed, airtight container for 4 days. Reheat in a skillet or in the air fryer.

Feel free to slice the tofu more thinly if you prefer a chewier texture. We keep ours about ⅛-¼ inch thick for the best balance of a crisp exterior and tender, moist interior.

Swap out rice for greens like arugula or romaine, add more veggies if desired.
