How to Cook Lentils (The Easy Way)

My favorite way to cook lentils is on the stovetop, because it’s easiest to gauge how long to cook them. Because they vary in size, cooking times can vary significantly! We use the stovetop pasta cooking method for the best results, eliminating the guesswork.

  1. Rinse the lentils: Place the lentils in a fine-mesh strainer and rinse them under cold water to remove any debris or impurities.
  2. Cook the lentils: In a medium-sized pot, combine 1 cup of lentils with 3 cups of water or vegetable broth, salt, and pinch of black pepper and a bay leaf. Stir and bring to a boil.
  3. Reduce the heat to medium-low and simmer with a lid on until the lentils are tender. This will range in time, depending on the type and size, from 10 to 30 minutes. Cook until tender, yet they still hold their shape (al dente). You can check for doneness by taste-testing a few lentils. Be careful not to overcook them, as they can become mushy.
  4. Season the lentils: Once the lentils are cooked, you can drain them off if you like, add a drizzle of olive oil, a pinch of red pepper flakes, a squeeze of lemon juice, and fresh herbs like fresh parsley, dill, or basil.

Instant Pot Instructions

If you are using a pressure cooker or Instant Pot, typically, you would use a 1:2 ratio of lentils to water or broth and cook them at high pressure for about 7-10 minutes (depending on their size), with a natural pressure release.

Storing Your Cooked Lentils

Leftover lentils will keep up to 4 days in an airtight container in the refrigerator. They can also be placed in the freezer for up to 4 months. I like to make a big batch and freeze in smaller portions for easy weeknight dinners.

  14. Some great lentil recipes here. I really like the red lentil Dahl and sweet potato. I agree that roasting the veg before adding adds that extra flavour, love it with some roasted cauliflower too.
