Farmers Market Veggie Platter – a delicious way to incorporate more veggies into our diets & try new varieties! Vegan adaptable & gluten-free!
When I first started thinking about this post, it was really intended to be about Hakurei Turnips. Sometimes called Tokyo turnips, or Salad Turnips. They are often referred to as a “salad turnip” because of its crisp and cool crunch and peppery earthy flavor.
I once asked a grower, what his favorite way to prepare these and he told me he loved to eat them like he would an apple, biting into them raw and whole right out of the garden. So I gave it a shot and was so amazed! Crisp, crunchy, juicy, this turnip won me over immediately. If you’re a radish fan, you will love these, I promise!
Many of you have asked for healthy snack ideas, and this Farmers Market Veggie Platter is what I turn to most often. It satisfies my cravings- especially the one where I just want to mindlessly crunch while watching Netflix. 🙂
Make it with one of the several dip options below… Creamy Cilantro Lime, Smoky Paprika Dip, or the Vegan Cilantro Lime.
For those of you watching calories or cholesterol – a healthy, clean option is to forgo the dip altogether and make it Mexican Street Food style. Squeeze lime juice all over the veggies, sprinkle with salt and chili powder. A healthy and satisfying snack!
I love the cooling crunch of radishes and cucumber….so delicious!
As for dips, we have quite a few options! One of my favorites is the Creamy Vegan (and Keto!) Hemp Dip here below. It can be made in 5 minutes flat and is full of so much flavor!
This Smoky Harissa Red Pepper Dip is made with white beans and topped with pistachios, cumin seeds and optional feta- another delicious thing to drag your fresh veggies through.
This cilantro dip is tasty too and is vegan adaptable.
Here’s a creamy paprika dip.
This Lemony Artichoke White Bean Dip is a quick and easy twist on “hummus” that can be made in 10 minutes flat. Great for veggie dipping and made with simple pantry ingredients
This vegan cilantro dip with silken tofu is tangy and tasty.
Baba Ganoush is always a nice option too!
One of my favorite Hummus variations is this Tandoori Hummus, soooo tasty with fresh veggies!
No matter if you go with one of these dips – or choose the leaner route with just lime juice, salt, chili powder and coriander, the point is… fresh raw farmers market veggies are delicious right now!
Go out and get some!
