Creamy and so delicious this French Onion Dip is fairly simple to throw together. Caramelized onions are the key to the depth of flavor. Cooking the onions low and slow really brings out the natural sugars, transforming them into a beautiful velvety jam-like consistency. As the onions caramelize, there is just a little bit of chopping, and the rest of the dip comes together quickly. Ingredient Notes

  • Caramelized Onions– Yellow onions work best. You really should double the batch while you are making these. They are magic flavor enhancers. You will find many uses for them: soups, pizza, sandwiches, salad dressings…etc.
  • Greek Yogurt– Any thick smooth yogurt that you like the taste of.
  • Fresh Herbs– Parsley and chives are our go to’s. Feel free to play around with what is fresh and available for you.

Step One- Start by caramelizing the onions. This will take a little time but that is where the deep delicious flavor comes from.

TIP: Slice the onions in half moons, with the grain and no thinner than 1/8 inch thick to keep moisture in and prevent burning.  This ensures proper extraction of the sugars.

Step Two- Dice up caramelized onions.

Step Three- In a bowl mix together yogurt, salt, pepper, chives, parsley, garlic powder Worcestershire, apple cider vinegar and caramelized onions. Thoroughly combine. Adjust flavors: adding more salt, pepper or vinegar as desired.

Serve chilled with chips, crackers and fresh veggies.

Ingredients

  • 2 medium yellow onions
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 2 cups Greek yogurt
  • 1/2 teaspoon salt (more to taste)
  • 1/4 teaspoon pepper
  • 1 teaspoon chives, fresh and chopped
  • 2 tablespoons parsley, chopped fresh
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire (see note)
  • 1 teaspoon apple cider vinegar

Instructions

  1. Slice the onions into half moons, with the grain no thinner than 1/8 inch thick.
  2. Caramelize the onions: Heat a 10-inch cast iron skillet or carbon steel pan on medium-high. When the pan is hot, add onions stirring a few times- cook this way, without oil, for 5 minutes. Add the olive oil and salt, stirring for a minute to fully incorporate.  Turn heat down to medium-low. Stir every 5-10 minutes for 30-50 minutes. The onions should be a dark caramel color, smell amazing and be greatly reduced.  Deglaze the pan by adding 1 tablespoon of water and scrape the pan to get the stuck crusty browned bits off the pan.  This is known as fond and is bursting with flavor.  Don’t skip this step!   3. Dice up caramelized onions. Measure out 1/2 cup.
  4. In a bowl mix together yogurt, salt, pepper, chives, parsley, garlic powder, Worcestershire and apple cider vinegar. Fold in the chopped caramelized onions until the dip is thoroughly combined. Adjust flavors adding more salt, pepper or vinegar as desired.
  5. Serve chilled with chips, crackers and fresh veggies.

Worcestershire is optional but adds a nice depth. Wizard is a vegan brand of Worcestershire that works great.

  1. I’m making this right now and noticed the recipe calls for worcestershire sauce–it says see not but I do not see a note! And I’m curious about what the note would have said because my mother is allergic to worcestershire and I wondered if there were substitutions, or if it is optional. What would that note have said?
