Sheet-pan dinners are one of my favorite ways to get a flavorful dinner on the table with minimal fuss-and even less cleanup. Here you’ll find 25 of our best sheet-pan dinners, from colorful chicken and vegetable meals to salmon, fish, and plant-based favorites.
As a chef, I love this cooking method because roasting everything together builds so much flavor with very little hands-on time. The trick is knowing what to put on the pan together-and when. Below, I'll share a few of my best tips for getting everything beautifully browned and perfectly cooked.
Chef’s Tips for Better Sheet Pan Dinners
Use parchment paper! Line your sheet pans with parchment paper for the easiest cleanup. I love the “If You Care” brand for high heat.
Give everything room. Crowding the pan traps steam and prevents browning. Use a large rimmed sheet pan-or divide dinner between two pans when needed.
Match your cooking times. Pair ingredients that cook at roughly the same rate, or cut slower-cooking vegetables smaller. Potatoes and winter squash may need a head start before you add quicker-cooking vegetables or fish.
Use enough oil. A light, even coating encourages vegetables to caramelize and keeps proteins from drying out. I love my olive oil spray bottle!
Finish with something fresh. A squeeze of lemon, fresh herbs, a punchy sauce, or a sprinkle of something crunchy can transform a simple roasted dinner.
Use high heat to your advantage. Sheet-pan dinners are at their best when ingredients roast and caramelize rather than slowly steam.

Sylvia, do you think I could bake any of these Sheet Pan Recipes in a Pyrex glass casserole dish (the ones that are usually 9 x 13″) ?
Many of these need to spread out to cook evenly and for the length of time it states. I wonder if you halved the recipe?

I have made the shawarma sheet pan meal and the ratatouille sheet pan meal multiple times. Both are amazing with LOTS of flavor. The recipes are both easy to make and come together quickly after a full work day. I have also made at least 10 other recipes on this site and all of them have been great. (Highly recommend the falafel recipe and making your own pita – so good and so fun.) This is now my go to site to support my efforts to have a more plant based diet. One question…are you aware of any easy way to substitute soy ingredients for non-soy containing ingredients? I have a soy allergy, not fatal but enough to avoid it.
Hi Tracy, Thanks much, glad you are enjoying. When you say soy ingredients…do you mean soy sauce? I’ve seen coconut amino acids which could replace that. Or do you mean Tofu?
We just made the harissa chicken and it was amazing! We left out the spice for my 10 month old baby and he liked it. My husband doesn’t like many veggies but loved the onion and sweet potatoes! Now we are just trying to decide what to try next!

I love your sheet pan recipes. It is not that I’m lazy but … after eating a great meal I would rather kick back with a glass of wine than spend a lot of time cleaning the kitchen. These one pan dishes make it a lot easier. I have made four of the recipes listed and a couple variations using vegetables from my garden. I find it amusing to think of my growth as a chef the past few years. Your website has introduced me to ingredients, spices and herbs I had never tried before.
