CheF’S Tips & Faqs

What's the best way to keep chicken juicy?

Let the chicken rest for 5-10 minutes after cooking so juices redistribute. Marinating also helps lock in moisture and not overcooking-especially for lean cuts like chicken breast.

How long should I roast a whole chicken?

Roast a whole chicken at 425°F (220°C) for about 15 minutes per pound, or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.

What's the safest internal temperature for chicken?

According to the USDA, chicken is safe to eat when it reaches 165°F (74°C). Use an instant-read thermometer for accuracy. I do prefer my thighs to cook a bit longer, to 175°F.
