Smoky, earthy, and bursting with bold flavor, it’s delicious drizzled over roasted vegetables, grilled fish, chicken, sandwiches, grain bowls, and more. Made with simple pantry ingredients, it’s naturally vegan, gluten-free, and ready in just 20 minutes (or 5 minutes with the shortcut version!).

What is Spanish Romesco Sauce?
Romesco Sauce is a flavorful sauce typically made with roasted red peppers, tomatoes, onions, garlic, and almonds or hazelnuts that originates from the Catalan region of Spain.
The addition of nuts gives the Romesco Sauce a robust richness and heartiness. It’s a nice addition to what you are already cooking at home and can transform the ordinary into something really exciting.
It’s a good recipe to learn and keep in your repertoire, and the ingredients are ones I usually have on hand, making it easy to whip up. This Romesco sauce recipe is also vegan and gluten-free.

Romesco Sauce Ingredients
- Red bell pepper: Roasting or sautéing the pepper brings out its natural sweetness and gives the sauce its signature smoky flavor and vibrant color. You can substitute 1 cup of roasted red bell peppers to save time.
- Onion and garlic cloves: Add depth and sweetness as they cook. Roasting or sautéing until lightly caramelized creates the richest flavor.
- Olive oil: Good quality extra-virgin olive oil adds richness and helps create a silky texture.
- Toasted almonds or hazelnuts: Toasted nuts give romesco its signature nutty richness and creamy body. Almonds offer a slightly milder flavor, while hazelnuts create a deeper, earthier sauce. Toasting the nuts before blending makes a noticeable difference.
- Tomato paste: For concentrated tomato flavor, a touch of sweetness, and savory umami. If you have a few extra minutes, cook it briefly with the vegetables for deeper complexity.
- Spices: Cumin, smoked paprika, chili flakes, and salt combine to create smoky depth, warmth, and a gentle kick.
- Sherry wine vinegar: For a bright, tangy finish. Red wine vinegar is a good substitute.
- Fresh Italian parsley: For freshness and a nice contrast to the rich, smoky flavors.
Romesco sauce Variations
Feel free to experiment with the basic recipe and add any of the following:
- Sun-dried tomatoes– this will work in a pinch if you dont have bell pepper.
- Roasted tomatoes (you can roast your own fresh tomatoes along with the peppers and onions)
- Dried chilies that have been rehydrated – add a nice heat!
- Anchovy- adds depth and umami flavor- one of my favorite additions!
- Other nuts or seeds (pumpkin, pine nuts, sunflower, pecans, walnuts)
- Grated parmesan or pecorino- for punchy depth and flavor.
- Herbs– play around with adding different savory herbs.
Ways to Elevate Romesco Sauce
- Grill or smoke the veggies: To elevate the flavors, try grilling or smoking the peppers and onions to give them a little charred smoky goodness.
- Try different peppers: Play with adding different peppers or reconstituted dried chilies.
- Make it more traditional: In Spain, the traditional recipe also contains stale bread or breadcrumbs for added texture (which I’ve left out this time) and Nora peppers, which are difficult to find here in our area. I’ve kept this version intentionally simple, easy, and gluten-free, with more accessible ingredients. Feel free to embellish!
How to Make Romesco Sauce
1. Roast or sauté. The stovetop method takes 20 minutes, while roasting takes about 40 minutes. Both work great for this recipe!

Roasting method: Preheat the oven to 425F. Cut the bell pepper in half and remove the seeds. Place the open sides down on a greased or parchment-lined baking sheet. Cut the onion into 1/2-inch rings and add to the pan, along with the whole garlic cloves. Brush or spray with olive oil and roast 25-30 minutes. Check the garlic halfway through, remove once tender and golden. Continue roasting the remaining veggies until slightly charred.
Stovetop method: Dice the bell pepper and onion and sauté in a skillet with a tablespoon of olive oil over medium heat. Cook until tender and fragrant, about 8 minutes. Add smashed garlic cloves and sauté until the veggies begin to caramelize.
2. Purée. Add the veggies to the bowl of a food processor with the remaining ingredients (except for the parsley).

Blend until combined, leaving some texture or making it velvety smooth. I like to leave a little texture, but up to you! I also recommend a food processor over a blender for this reason.

3. Add fresh parsley. Add the chopped parsley to the food processor and pulse a few times. Taste, then adjust for salt and heat.
4. Serve. Transfer to a bowl and drizzle with olive oil. Sprinkle with parsley and crushed nuts.

Chef’s Tips
- Roasting creates the best flavor. If time allows, roasting the veggies develops deeper sweetness and smoky caramelized notes than the stovetop method.
- Leave a little texture. While you can blend the romesco until silky smooth, the sauce traditionally has a little texture. Blend until mostly smooth, but leave a few small bits of nuts and vegetables for a rustic finish.
- Taste and adjust. Find the perfect balance of acidity, salt, and heat. Add an extra splash of vinegar, pinch of salt, or more chili flakes until the flavors pop!
- Adjust the consistency as needed. Blend in a little extra olive oil for a richer sauce or a tablespoon or two of water if you’d like a thinner consistency for drizzling.
- Make a double batch! Because the sauce keeps for up to 10 days, you may want to double it for grilled vegetables, roasted potatoes, chicken, seafood, grain bowls, sandwiches, and pasta.
- Freeze for later. Romesco freezes beautifully. Store it in small containers or ice cube trays so you can thaw just what you need for quick weeknight meals.
Romesco Sauce Uses
Use Romesco Sauce like you would pesto! Stir it into soups or stews, slather it into a panini, sandwich, or wrap, toss it with pasta, drizzle it over veggies, grilled fish or meat, or simply serve it as a dip, alongside focaccia bread or crusty bread. I love its smoky flavor with:
- Roasted Cauliflower Steaks with Romesco Sauce & Lentils

- Other roasted vegetables, like asparagus, zucchini, or eggplant
- Buddha bowls
- Roasted fish
- Baked chicken

StoRing it
Store Romesco Sauce in a sealed jar with a layer of olive oil on top to prevent discoloration. Keep it in the refrigerator for up to 10 days (the sherry vinegar extends its shelf life!). You can also freeze it for up to 3 months.

Ingredients
- 1 large bell pepper (or sub 1 cup roasted bell pepper)
- 1/2 an onion
- 2 garlic cloves, smashed
- 1/4 cup olive oil, divided
- 3 tablespoons water
- 1/2 cup toasted almonds or hazelnuts
- 1 tablespoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes
- 1/2–3/4 teaspoon salt
- 1 tablespoon sherry wine vinegar (or red wine vinegar)
- 1/4 cup chopped fresh Italian parsley
Instructions
Stovetop method (20 mins)Â
Dice the red bell pepper and onion. Heat a skillet over medium heat and add 1 tablespoon olive oil, and saute onion and pepper until tender and fragrant, about 8 minutes. Add smashed garlic cloves and continue sauteing until onions and peppers start to caramelize.
Roasting Method (40 mins)Â
Preheat oven to 425 F. Cut bell pepper in half, remove seeds and place open side down on a greased sheet pan. Add the onion, cutting ½ inch rings, add the garlic cloves whole, brush or spray with olive oil and roast 25-30 minutes, checking on garlic halfway through. Remove garlic when tender and golden. Continue roasting pepper and onion another 10 minutes, or until all are tender and slightly charred.
Blend Romesco Sauce:Â
Place the pepper-onion mixture a food processor with all the remaining ingredients (except the parsley). Pulse until combined. You can keep this quite coarse, with more texture, or blend until very smooth and creamy.
Add the chopped parsley and pulse a few times. Taste, adjust salt and heat.
To serve, place in bowl and drizzle with olive oil. Sprinkle with parsley and crushed nuts if you like.
Notes
Extra Heat: Feel free to add fresh chilies to the cooking/roasting onion-pepper mixture. Or rehydrated dried chilies to the food processor.
5-minute version: Substitute jarred or canned Roasted Peppers (one cup, drained) (In this case, simply brown the onions and garlic on the stovetop- or use 1-2 teaspoons of each, granulated.
Store in a sealed jar, covering the sauce with a layer of olive oil to prevent discoloring.
The vinegar extends its shelf life- and will keep for 10 days in the fridge.

Love the romesco sauce! Tried the sweet potato balls, but had a hard time getting them formed–very gloopy. Next time, might try to refrigerate to firm up the mixture before coating with flour and searing. Other suggestions would be appreciated!
