Brush with olive oil and sprinkle salmon with salt and pepper on both sides, and lay it on an oiled or parchment lined baking sheet.
Cover with mustard.
Bake 12-15 minutes or until desired done-ness.

Generously coat salmon with mustard, using a brush or the back of a spoon.
Bake until desired doneness – about 10-15 minutes depending on thickness. Filets will take longer than individual portions.
Broil for a couple minutes to get a crispy crust (optional)!
