Preheat oven to 375 F
Brush Salmon with olive oil.
Sprinkle with salt and pepper on all sides of salmon. Lay salmon down on a parchment lined or greased baking sheet .
Generously coat salmon with mustard, using a brush or the back of a spoon.
Bake until desired doneness – about 10-15 minutes depending on thickness. Filets will take longer than individual portions.
Broil for a couple minutes to get a crispy crust (optional)!
