This Pineapple Salsa is one of our favorite salsas.  The sweet tangy fresh pineapple is perfectly complimented with smoky spicy chipotle pepper powder, fresh cilantro, white onion, and lime juice.

Fresh pineapple is best!  (Though canned pineapple will work too.)

It really is so worth cutting up a fresh pineapple.  After slicing and dicing, the salsa comes together in no time.  It saves for a few days in the fridge and goes with more things than you may think.

Sweet, spicy, fresh and addicting!  We have been enjoying this Pineapple Salsa on so many things!  Chipotle tostadas, black bean quesadillas, burgers, grilled halibut, baked tofu, and breakfast scrambles.

How to Make Pineapple Salsa

STEP ONE –  Trim and peel a fresh pineapple, dice up 2 cups worth.  This is about half of a medium-sized pineapple.

 

STEP TWO – Into a bowl add pineapple, diced onion, chopped cilantro, lime juice, chipotle powder and salt.  Mix and store in the fridge until ready to use.

This Pineapple Salsa will keep in the fridge up to 4 days.

 

Expert Tip!

Dicing everything very small gives a balanced taste with every bite.

  • 2 cups fresh pineapple, finely diced
  • 1/3 cup cilantro, chopped
  • 1/2 cup white onion, finely diced
  • 1 medium lime, juiced
  • 1/4 teaspoon chipotle powder (for less spicy, substitute ancho chili powder)
  • 1/8 sea salt


Instructions

Mix together the diced pineapple, onion, chipotle powder, cilantro, lime juice and salt.

Taste and adjust the spice level to your liking, along with salt and lime.

Refrigerate until serving.

  1. I love pineapple salsa–I sometimes add cucumber to this for a bit of crunch. Last night, I subbed the chipotle and salt with tajin, and it was terrific (sweet, salty and spicy–perfect). All it needed was a little smoke (bit of chipotle pepper in adobo sauce or smoked paprika). A lovely fresh change from the usual. Great with carnitas.






  2. Made this tonight with rice bowls. They had halibut, black beans, cabbage, cucumber, red pepper and a cilantro lime dressing. Every bite was an adventure, chasing the perfect balance of all the sweet, savory, salty, crisp, and cool flavors & textures. This pineapple salsa is so quick and easy and took the whole thing up a notch!
