Once upon a time, I thought I would start a salad dressing business. This was after I sold the restaurant when I was still relatively young and still had drive and energy. Those days have gone, but I still like to play with the idea in my head, and this dressing would be one of my offerings. 😉

This creamy Gorgonzola Dressing is really delicious! It’s great on sturdy greens like romaine and little gems (try this wedge salad) or as a tasty dip for all those garden veggies you have growing. My husband loves a spoonful of it over his grilled burger, or grilled chicken to give a boost of flavor.

But first, What is Gorgonzola?

Gorgonzola Cheese is an Italian cheese traditionally made from cow’s milk, creamy in texture and slightly salty in flavor, with blue veins. It is similar in appearance to blue cheese but has a creamier texture and less sharp, tangy flavor.

Think of this like Blue Cheese dressing, only a little mellower, deeper, less tangy, and more creamy.

Gorgonzola Dressing Ingredients

  • Gorgonzola Cheese– an Italian cheese traditionally made from cow’s milk, creamy in texture, slightly salty in flavor, with the blue veins you find in blue cheese.
  • Fresh Garlic and shallot- to add punchy flavor to the dressing.
  • Vinegar- to add a little acidity. A lighter vinegar works best- apple cider vinegar, red wine vinegar, white wine vinegar.
  • Mayo and Sour creamto add creaminess. Feel free to swap Greek yogurt for sour cream.
  • Fresh chives
  • Salt and fresh black pepper

How to make Gorgonzola Dressing

Simply add all the ingredients to a bowl and whisk to combine.

The dressing will not be completely smooth unless you blend it, but I prefer the texture that the little gorgonzola crumbles add.

Storing Gorgonzola Salad Dressing

Store the gorgonzola dressing in a mason jar or sealed container in the refrigerator for up to one week.

Ways to use Gorgonzola Dressing

  1. As a dressing– toss with sturdy greens like our  Little Gem Wedge Salad

  3. As a dipping sauce for Wings
  4. Drizzle over mushrooms, burgers or grilled meats

Ingredients

Units

Gorgonzola Dressing:

  • 1/2 cup mayo
  • 1/4 cup sour cream
  • 1/2 cup crumbled gorgonzola cheese (2 ounces) or sub-smoked blue cheese for MORE flavor
  • 1 small clove of garlic, finely minced or grated
  • 1 tablespoon finely chopped shallot or onion
  • 1 tablespoon vinegar- Apple cider, red wine or white vinegar
  • 2 tablespoons chopped chives
  • 1/4 teaspoon salt
  • Pepper to taste
  • optional– a splash of Worcestershire sauce (for more depth) or 1/2 teaspoon horseradish for a little kick.


Instructions

Mix all ingredients together in a small bowl.

Chill until using, up to 7 days.

  1. I just made it for tonight’s salad with our salmon dinner and it tastes delicious! I had to use Trader Joe’s crumbly gorgonzola as they didn’t have crumbles, but it may just give it a creamier edge 🙂
