We’ve taken our Manoushe (Lebanese flatbread) slathered with zaatar paste and used it as a flavorful wrap for crispy pan-seared halloumi cheese, fresh summer veggies, and our tasty tahini yogurt sauce. Add some pickled red onions, and you’re good to go!
A time-saving tip is to use store-bought tortillas as the wrap, lavish bread or pita bread.

Ingredients
- Tortillas: Use 12-inch tortillas or make a 1/2 batch of Manoushe (gluten-free adaptable). You can also use gluten-free tortillas or wraps.
- Zaatar: Make our homemade Za’atar Spice blend or use store-bought. Made with savory dried herbs for incredible flavor.
- Halloumi cheese: A semi-hard cheese unripened and brined, perfect for pan-searing to get a crispy texture on the outside.
- Fresh veggies and herbs: Cherry tomatoes, sliced cucumbers, microgreens or arugula, fresh herbs (mint, cilantro, parsley, or basil), and pickled red onions.
- Tahini Yogurt: Use Greek yogurt for extra tangy flavor! Or make tzatziki to add a creamy, cooling component to the crunchy wrap.
- Hot sauce: Optional, but nice for a bit of kick!
How to Make a Halloumi Wrap
Step 1: Make the optional manoushe dough. If making manoushe dough, allow time to let it rise and double in size. Form into tennis-sized balls and let them sit for 10 minutes, then roll them out onto a floured surface as thin as possible, creating a 12-inch round. You can substitute 12-inch tortillas.
Step 2: Make quick pickled onions and tahini yogurt sauce. Save time by prepping these ahead of time!
Step 3: Preheat oven to 450F. Use a pizza stone if you have one.
Step 4: Fry halloumi. Slice the halloumi into 1/3-inch slices and pan-sear each side in a lightly oiled frying pan until golden and crispy.
Step 5: Make zaatar paste. Mix olive oil and zaatar in a bowl and brush manoushe with this. Bake on the pizza stone until bubbling, slightly crisp, and tender. See notes for tortillas, pita, and lavish bread.
Step 6: Assemble. Place halloumi, tomatoes, cucumbers, pickled onions, and microgreens on the top half of the manoushe. Fold up and over, as if making a quesadilla. Fold again, bringing one corner to meet the other, creating a cone.
Wrap in parchment and place in a cup or glass to hold it upright. Drizzle with tahini yogurt and enjoy! You can also serve the tahini yogurt on the side as a dip.
Recipe Variations
- Herbs: Mint, cilantro, parsley, and basil will all taste great in this recipe. When you prepare it, trying mixing it up!
- Veggies: Grated carrots or grated beets would make a nice addition. Or you could add roasted sweet potatoes, sautéed peppers and chillies, or even grilled chicken.
- Greens: Instead of microgreens or arugula, try massaged kale or chopped romaine.
- Sauce: Swap hummus for the tahini yogurt!
- Lemon: Drizzle with a fresh squeeze of lemon juice!

- 6–8 ounces halloumi cheese, sliced
- 1 cup cherry tomatoes, cut in half
- 1 cup sliced cucumbers
- 1–2 cups microgreens or arugula
- optional: fresh herbs- mint, cilantro, parsley or basil
- 1/2 batch pickled red onions
- 1/2 batch Tahini Yogurt (or tzatziki)
- Optional: Hot sauce
Instructions
- If making with Manoushe dough– make this first and let it rise, doubling in size. Form two balls the size of a tennis ball, let stand for 10 minutes, then roll out on a floured surface as thinly as humanly possible- into a 12-inch round.
- Make the quick pickled onions and tahini yogurt sauce. (You can do these ahead and refrigerate.)
- Preheat oven to 450F – use a pizza stone if you have one.
- Cut the halloumi into ⅓-inch slices and pan sear each side in a lightly oiled non-stick pan until golden and crispy. Set aside.
- Mix the olive oil and zaatar in a bowl to create a paste and brush the mounoushe with this. Bake on a pizza stone, until bubbling yet still tender. See notes for tortillas, pita and lavish bread.
- Assemble. Place the halloumi, tomatoes, cucumbers, pickled onions and microgreens on the top half of the manoushe- and fold the manoushe up and over, as if you were making a quesadilla ( or half moon). Fold again, bringing one corner to meet the other corner, so now you have a cone shape. Wrap with the parchment you used in the oven, and place this in a cup or glass to hold it upright. Shape it into a cone.
- Drizzle with tahini yogurt and enjoy!
Notes
Time saver: You can use extra-large tortillas, lavish bread, or pita bread! Spread with the zaatar paste and warm in the oven until warm and pliable. Fold the tortillas like above (or make a burrito). Lavish bread may need to be rolled, or you can stuff the pita pocket ( zaatar paste inside).
Make ahead: Manoushe dough, pickled onions, and tahini yogurt can all be made ahead and refrigerated. The halloumi can be pan-seared ahead (refrigerated) and warmed up n the oven on top of the manoushe.
Other veggies and herbs: add fresh parsley or cilantro, grated carrots or grated beets.

We loved this! My husband made the manoushe and I made the rest. So good! I’ve never had halloumi cheese and it’s delicious in these wraps. We won’t always have the time to make the flat bread, and will probably use tortillas in the future, but for a Sunday dinner project, it was great tag-teaming it.
