This irresistible blackberry salad with arugula and basil is a snap to make and so refreshing, healthy and vibrant-perfect for summer! All in all, it is a very simple salad, here to inspire you to try adding different fresh and beautiful things to your daily salad bowl.

Peppery arugula (or baby spinach) is tossed with juicy, plump blackberries, red onion, basil leaves, and toasted slivered almonds. I love adding crumbled goat cheese, but feel free to keep it vegan. The maple-sweetened balsamic vinaigrette is straightforward and complements the salad perfectly.

Blackberry Salad Ingredients

  • Fresh blackberries – the star of the recipe here! Always use fresh! Frozen blackberries will get mushy so opt for plump fresh blackberries.
  • Arugula or spinach– We love peppery arugula paired with the sweetness of the berries.
  • Slivered Almonds for nutty crunch!
  • Crumbled Goat cheese or chevre- adds a creamy tangy component that pairs well with the blackberries.
  • Red onion- for a little “bite”. Feel free to soak the onions in salted water to soften the bite.
  • Extra Virgin olive oil– for delicious richness full of healthy polyphenols.
  • Balsamic Vinegar – or sub red wine vinegar.
  • maple syrup for a touch of sweetness.
  • Salt and black pepper

Instructions

  • Mix the salad dressing ingredeints together in a small bowl. This can be made ahead.
  • Place all the salad ingredients (all except the blackberries) to a large bowl.
  • Gently drizzle with the dressing and toss to lightly coat.
  • Then add the blackberries and gently toss to incorporate.
  • Serve immediately!

Serving Suggestions

The blackberry salad can be served in a large serving bowl, or individually plated for a more upscale dinner (see below).

If individually plating the salad, finish the plate with a balsamic glaze or balsamic syrup. Scatter chive or onion blossoms around the plate along with the slivered onions.

A simple recipe for Blackberry Salad with Basil and Arugula sprinkled with crumbled goat cheese, toasted almonds and a maple-balsamic dressing. A light and delicious summer salad!


Ingredients

Units
  • 5 ounces baby arugula (or spinach)
  • 1/4 cup thinly sliced red onion
  • 12 cups fresh blackberries
  • 1/3 cup crumbled goat cheese
  • 1/41/2 cup toasted slivered almonds (or sub maple pecans)
  • 1/4 cup basil leaves- torn ( purple basil is pretty here!)
  • optional: 1 tablespoon fresh chive or onion blossoms

Balsamic Vinaigrette:


Instructions

  1. Make the dressing- whisk all ingredients in a small bowl.
  2. In a large bowl, place arugula, basil and onions. Toss with just enough dressing to lightly coat ( you may not need all). Feel free to add the remaining ingredients and toss or plate individual portions.
  3. If plating: place the dressed greens onto plates. Top with blackberries, goat cheese, a few basil leaves, almonds and blossoms.
  4. Add a drizzle of balsamic glaze– optional.
  5. Serve immediately!

Notes

Feel free to assemble the salad ahead, refrigerate and toss with the dressing right before serving.
