This Whipped Ricotta recipe is the easiest appetizer you'll ever make! It's simple & fast while feeling elevated. A creamy, luscious dip, that can go either sweet or savory depending on your toppings.

Whipped Ricotta was one of those appetizers we came back to again and again in our catering days. It’s incredibly simple, yet somehow always feels elegant – creamy, luscious, and endlessly adaptable.

Over the years, I’ve learned a few tricks for getting ricotta perfectly smooth and fluffy rather than grainy, and I’m sharing them here. Keep it savory with olive oil, herbs, and roasted tomatoes, or go sweeter with honey, seasonal fruit, and toasted nuts. Either way, it takes just minutes to make and is perfect for entertaining.

Why you’ll love Whipped Ricotta

Silky smooth and creamy. A quick whirl in the food processor transforms ricotta into an incredibly light, luscious dip – no graininess here!

Ready in 5 minutes. With just a handful of ingredients and virtually no prep, it’s one of my favorite last-minute appetizers for entertaining.

Sweet or savory. Top it with honey, fruit, and toasted nuts, or go savory with olive oil, herbs, roasted tomatoes, olives, or mushrooms. It’s endlessly adaptable to the season.

Whipped Ricotta Ingredients

  • Whole milk ricotta – Use good-quality whole milk ricotta for the richest flavor and smoothest, creamiest texture.
  • Lemon – Fresh lemon juice brightens the ricotta, while lemon zest adds fresh citrus flavor.
  • Salt and black pepper – Simple seasonings that bring the flavors to life.
  • Fresh herbs – Basil, parsley, or mint add a fresh finish, especially for savory variations.
  • Honey or olive oil – Drizzle with honey for a sweeter version, or good-quality extra-virgin olive oil for savory whipped ricotta.

How to Make Whipped Ricotta

1. Blend. Add the ricotta, lemon juice, and salt to a food processor. Blend for about 1 minute, or until completely smooth and fluffy.

2. Season. Taste and adjust the salt and lemon juice. Spoon into a wide, shallow serving bowl.

3. Finish and serve. Add lemon zest and freshly cracked pepper, then finish with honey or olive oil and your favorite toppings. Serve with crostini, crackers, warm pita, or crusty bread.

How to serve Whipped Ricotta

Think of whipped ricotta as a blank canvas – it can easily go sweet or savory depending on the season and occasion.

  • For a sweet version: Drizzle with honey and top with fresh figs, strawberries, pears, or other seasonal fruit. Add toasted pistachios, almonds, hazelnuts, or pine nuts for crunch.
  • For a savory version: Skip the honey and drizzle with extra-virgin olive oil. Top with fresh herbs, olives, roasted cherry tomatoes, roasted peppers, sauteed mushrooms, or a little truffle oil.
  • Serve as a dip with seed crackers, sourdough crackers, crostini, pita bread, or crusty sourdough.
  • Whipped ricotta is also delicious spread on toast, spooned under roasted vegetables, tucked into an omelet, dolloped onto pasta, or used as a creamy base for pizza.

Chef’s Tips

  • Use whole milk ricotta. This is the biggest secret to rich, creamy whipped ricotta. Lower-fat ricotta tends to be drier and grainier.
  • Drain watery ricotta. If your ricotta has a lot of liquid, drain it briefly before whipping so the finished dip stays thick and creamy.
  • Give it time to whip. Let the food processor run for a full minute, scraping down the sides if needed. The texture should become noticeably lighter and smoother.
  • Serve it closer to room temperature. Ricotta tastes creamier and more flavorful when it isn’t refrigerator-cold. Let it sit out briefly before serving.

Storage & Make Ahead

Whipped ricotta can be made ahead and refrigerated in an airtight container for up to 4 days. For the freshest presentation, add herbs, fruit, nuts, and other toppings just before serving.

If the ricotta separates slightly, simply give it a stir before serving. Let it sit at room temperature briefly to soften and become creamy again.

FAQs

Why is my whipped ricotta grainy?

Use a rich, high-quality whole milk ricotta. A little liquid helps achieve a smooth texture too. We use a little lemon juice-a little goes a long way!

What can I use if I don’t have a food processor?

Yes. A high-powered blender, immersion blender, hand mixer, or stand mixer can work, although a food processor gives the smoothest, fluffiest texture.

Can whipped ricotta be made ahead?

Yes! Make it up to a few days ahead and refrigerate it in an airtight container. Add your toppings just before serving.

Whether you enjoy this delicious appetizer sweet or savory, I know you will love this recipe! I can’t wait to hear what you think. – xoxo

  1. This was so good. We love to offer appetizers when friends stop by and this one is a favorite. I see you recommended trying poached dried figs for a topping. I hadn’t thought of that but I think I’ll try it next time!

  2. This appetizer is always a hit, a real crowd pleaser. Extravagant is the comment I hear most often.

    1. Great question. I have not tried whipping ricotta blender, but I bet it would be fine on low speed.

  3. Beautiful presentation when in a shallow bowl with toppings. This app went over very well at a friends gathering. I topped with sliced olives, lemon rind, black pepper, parsley and a sundried tomato mince. I liked the flavor combo but think the ricotta is almost better suited with something on the sweet side. Looked for figs but not in season.
Anyways it was a party hit and I will definitely make again. So easy too. Thx Sylvia…… your recipes are fabulous!

    1. Sounds good Susan! But yes the figs are amazing- maybe could try with poached dried figs?

  4. This was the hit of our book club gathering. Made as stated, it was excellent! Felt like a came from a 5-star restaurant.
