These festive Cranberry Orange Muffins were created by my beautiful friend Alison over at Boots Bakery and Lounge.
They are not only beautiful and tasty, but they are also gluten-free and vegan!
Those of you familiar with Boots, already appreciate that most of the food they serve up is both vegan and gluten-free, a true gem in our neck of the woods. But if vegan gluten-free is not your thing, you will still enjoy these muffins, and if you happen to live locally in Spokane, Boots is a must-see.

Cranberry Orange Muffins with Rosemary

Description

Cranberry Orange Muffins – vegan and gluten-free, these are simple to make and full of flavor! A tasty. addition to your holiday table!


Ingredients

Units Scale

3 1/2 cups gluten-free flour (make sure it has xanthan gum, if not add 1 teaspoon)
1 cup gluten-free oats
2 cups sugar
1 tablespoon baking soda
1 teaspoon salt
1 Tablespoon Orange zest
1 Tablespoon chopped rosemary
1 1/2 cups rough chopped cranberries
2/3 cup oil
2 teaspoons orange extract ( pure) optional
1 Tablespoon Apple cider vinegar
2 cups water

Glaze:
Juice of two oranges
1 cup powdered sugar

Garnish: rosemary and orange zest


Instructions

  1. Preheat Oven to 350F
  2. In a large bowl, mix all dry ingredients together, including rosemary, zest and cranberries.
  3. In a separate bowl, mix wet ingredients together.
  4. Pour wet into dry and mix well.
  5. Fill greased muffin cups 3/4 full and bake about 20 minutes or until a toothpick comes out clean.
  6. Make glaze: In a small bowl mix orange juice with powdered sugar until combined.
  7. Drizzle over muffins.
  8. Garnish with rosemary and orange zest!

Notes

Make sure GF flour  has xanthan gum, if not add 1 teaspoon

  1. This is not a review of the recipe, but I didn’t know where else to put this – I’ve missed having a “Desserts” option to select in the drop down options. I noticed this category disappeared when the website’s format changed. I don’t know if it was on purpose or if it was an oversight but figured I’d say something in case it was the latter.

  3. Summer is such a great time to entertain. You have the warm daytime sunshine as well as refreshing nights. I was looking for some holiday party ideas, found them including a couple of cocktail catering presentations.

  4. This is the second time I have seen orange, cranberry and rosemary as flavor components. I am quite taken with it. Seems like they would both compliment and enhance each other. I love scones.These are keepers to me.
