Vegetable-Inspired Recipes for Every Season

Most of the recipes you’ll find here at Feasting at Home highlight at least one seasonal vegetable.

Veggies are at the foundation of the way we shop, cook, and eat- and for me, it always starts there.  I’ll find a beautiful winter squash at the farmers market, and then build a meal around it.

It becomes a lovely ritual, to honor what is in season, and hopefully coax out its most exquisite features.

Here are our favorite vegetable recipes. Side dishes, dinners, lunches, salads and soups! Many are vegan or vegetarian – but all feature vegetables prominently and proudly!
