Description
Green Tahini Sauce made with tahini paste, fresh herbs, garlic, lemon and a few slices of green chilies. Perfect with falafels, shawarma, mezze platters!
Ingredients

1/2 cup water

2 tablespoons lemon juice

3 tablespoons olive oil

2 fat garlic cloves

3/4 cup fresh herbs (Cilantro, Italian parsley, Mint, dill or basil or a combo! See notes)
- 2–3 slices jalapeno (optional)

1/2- 1 teaspoon salt, start with 1/2 teaspoon add more to taste

1/2 cup tahini paste, stirred
Instructions
Place all the ingredients (except the tahini paste) in a blender or food processer and blend until combined but not overly smooth. Add tahini paste. Blend until creamy, leaving some of the herbs intact.
Taste, and adjust salt, acid and heat. (Add salt, lemon, fresh chilies to taste).
If you want a “looser “sauce, add a little more water until the desired consistency.
Notes
Optional: Feel free to add 1-2 teaspoons Zaatar if you like.
Herbs: I like using a blend of 2 or 3 herbs here- (Italian parsley, mint and cilantro are my favorite combo) but if in a pinch one herb is fine too. Thin stems are ok.
Store in a sealed jar in the fridge for up to 5 days.
