Description

This lightened-up Blue Cheese Dressing recipe is creamy, punchy and flavorful! Made with yogurt instead of mayo, it contains half the calories of most other recipes without lacking in flavor.


Ingredients

Units
  • 4 ounces blue cheese
  • 1 cup Greek yogurt, full fat (or sub 1/2 cup sour cream and 1/2 cup mayo)
  • 1 fat garlic clove, finely minced
  • 2 teaspoons Worcestershire sauce
  • 3/4 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon ground mustard
  • 2 tablespoons fresh chives or Italian parsley
  • 1 teaspoon lemon juice
  • water or olive oil to thin, if desired


Instructions

  1. Crumble Blue cheese into a bowl, and mash it up a bit. 
  2. Add yogurt,  garlic, Worcestershire sauce, salt pepper and mustard and whisk well. Stir in fresh chives. 
  3. Thin the dressing to your desired consistency, adding water or olive oil.
  4. Add a squeeze of lemon juice, and adjust salt and pepper to taste. ( Tip: it is best to taste the dressing on what you are serving it with.)

Notes

Blue Cheese Dressing will keep up to 7 days in the refrigerator or can be frozen.

If using yogurt, I like a little splash of olive oil for extra richness.
