Description
This lightened-up Blue Cheese Dressing recipe is creamy, punchy and flavorful! Made with yogurt instead of mayo, it contains half the calories of most other recipes without lacking in flavor.
Ingredients
Units
- 4 ounces blue cheese
- 1 cup Greek yogurt, full fat (or sub 1/2 cup sour cream and 1/2 cup mayo)
- 1 fat garlic clove, finely minced
- 2 teaspoons Worcestershire sauce
- 3/4 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon ground mustard
- 2 tablespoons fresh chives or Italian parsley
- 1 teaspoon lemon juice
- water or olive oil to thin, if desired
Instructions
- Crumble Blue cheese into a bowl, and mash it up a bit.
- Add yogurt, garlic, Worcestershire sauce, salt pepper and mustard and whisk well. Stir in fresh chives.
- Thin the dressing to your desired consistency, adding water or olive oil.
- Add a squeeze of lemon juice, and adjust salt and pepper to taste. ( Tip: it is best to taste the dressing on what you are serving it with.)
Notes
Blue Cheese Dressing will keep up to 7 days in the refrigerator or can be frozen.
If using yogurt, I like a little splash of olive oil for extra richness.
