Here’s a very quick and easy recipe for one of my favorite homemade salad dressings. Raw Apple Cider Vinaigrette! Use this as an “Every day” salad dressing on leafy green salads, grain salads or even bean salads. We always have some on hand and I love how it pairs with many different things.

It is so simple and easy to make your own dressings and vinaigrettes at home. But the main reason I like to make my own homemade salad dressings, instead of store-bought dressings is that I can control the type of oil in the dressing. Many dressings, even high end, organic dressings are made with “seed oils” (canola, safflower, sunflower, soy, corn, etc.) which some doctors consider to be toxic in high amounts, because of the way they are processed. I am making a concerted effort to cut back on these seed oils.

So here we are using extra virgin olive oil.

What type of Apple Cider Vinegar to use?

Use raw, unpasteurized,  apple cider vinegar with the mother in it. The “mother” in Apple Cider vinegar is the harmless, healthy bacteria in the vinegar that gives raw, unpasteurized apple cider vinegar all its healthy probiotics- so good for gut health. It lowers insulin levels among many other health benefits.  But truthfully, I love this dressing for the flavor, health benefits aside!

Ingredients

Units Scale
  • 1/4 cup raw apple cider vinegar ( with the “mother” in it)
  • 1/4 cup olive oil
  • 1/2 teaspoon dijon mustard
  • 1 1/22 tablespoons raw honey ( or maple syrup)
  • 1/41/2 teaspoon salt
  • 1/41/2 teaspoon pepper
  • optional additions: fresh herbs, lemon juice or zest, 1 finely minced garlic clove or 1 tablespoon finely minced shallot

Instructions

Place all salad dressing ingredients in a small mason jar, seal and shake until well combined.

Keeps for 2 weeks in the fridge.

  3. I added the minced garlic, did 1/4 salt and 1/4 tsp pepper with a couple of shakes of Ms. Dash seasoning. First taste was a little tart. I might have been on the lighter 1.5 TBS side of honey. Added another .5 TBS of honey, and it was perfect.

  4. This was great! Love how simple and easy it was to make and so balanced. Perfect for my daily lunches and salads.
