Introducing Brie Cake! One of my personal indulgences is really good cheese and on special occasions, like birthday parties or holiday gatherings where I know it will be shared, it’s a delicious way to have a tiny little dose of my very favorite thing.  Knowing this, I savor every delicious bite. Simple pleasures!

What you’ll need for Brie Cake

  • Fruit: Dark berries, currants, grapes, sliced pears, and fresh figs make a dramatic presentation.
  • Brie: This delicious wheel of cheese is a soft, blue-veined goat cheese by Cyprus Grove called Humboldt Fog, about 5-6 inches in diameter, available, believe it or not…Costco.  I love the small one-pound wheel and its dramatic height. A double cream brie would also work well here,  or two-three mini wheels of regular brie, stacked on top of each other to create dramatic height. But really if you can get the Humboldt Fog, it’s truly worth it. This is not a sponsored post, I just happen to really love this cheese.
  • Drizzle with honey and serve with seeded crackers or sliced baguette.

This is meant to be a very playful recipe, so just have fun with it. Edible flowers would also be a pretty addition, as well as sprigs of fresh herbs.

This Brie Cake was inspired by the Three Virgos. The Three Virgos are three of my dearest friends whose birthdays are usually celebrated all together in September. This year, the celebration happened in Seattle on a boat, and my job was to bring the cake. The challenge was that one of the ladies is not a huge fan of sweets, so I started thinking, what could I make, that looked like a cake, that I could put a candle in…. but was not overly sweet. So… that’s how brie cake came to be, in case you were wondering. 😉

Why I love brie cake!

The nice thing about this appetizer or dessert is it requires no cooking. It’s just simple assembly. If transporting, just assemble it once you get there. It takes 10 minutes if that.

Description

Simple, beautiful Brie Cake topped with fresh berries, figs and grapes, drizzled with honey and served with seeded crackers –  an easy, festive appetizer or dessert, perfect for celebrations and gatherings.


Ingredients

Units Scale
  • 1 lb wheel Humboldt Fog ( or 5-6 inch diameter wheel brie or double cream brie- see notes)
  • 1 cup fresh blackberries, raspberries or other berries
  • small bunch champagne, concord or other small grapes
  • 34 figs, quartered
  • optional additions – currants, herb sprigs, edible flowers, small sliced pears
  • 12 Tablespoons drizzle of honey
  • seeded crackers or baguette

Instructions

  1. Place the wheel of cheese on a simple white plate or platter. ( see notes)
  2. If using a tall candle or sparkler, secure it in the center first.
  3. Begin layering fruit and berries creating as much height as possible. Tuck in a few sage leaves, edible flowers or rosemary sprigs. Have fun with it!
  4. Add remaining fruit to one side on the plate, or around the cheese on the plate.
  5. Drizzle with honey.  Serve with a basket of crackers, spiced nuts and champagne!
  6. Slice like you would cake.

Notes

Humboldt Fog ( by Cypress Grove) can be found locally at Costco…. or order on line.

If going with basic brie, stack two to three mini wheels to create a more dramatic effect. Use a little smear of honey to stick them together.
