Some of us are vegetarian/pescatarian but we all want to eat a more plant-focused diet without spending too much time in the kitchen. So much goodness to choose from here.

  4. Sylvia, do you think I could bake any of these Sheet Pan Recipes in a Pyrex glass casserole dish (the ones that are usually 9 x 13″) ?

    1. Many of these need to spread out to cook evenly and for the length of time it states. I wonder if you halved the recipe?

  5. I have made the shawarma sheet pan meal and the ratatouille sheet pan meal multiple times. Both are amazing with LOTS of flavor. The recipes are both easy to make and come together quickly after a full work day. I have also made at least 10 other recipes on this site and all of them have been great. (Highly recommend the falafel recipe and making your own pita – so good and so fun.) This is now my go to site to support my efforts to have a more plant based diet. Thanks for all of the time and energy you put into providing us such tasty recipes. Your site is a gold mine!!

    One question…are you aware of any easy way to substitute soy ingredients for non-soy containing ingredients? I have a soy allergy, not fatal but enough to avoid it.

    1. Hi Tracy, Thanks much, glad you are enjoying. When you say soy ingredients…do you mean soy sauce? I’ve seen coconut amino acids which could replace that. Or do you mean Tofu?

  8. We just made the harissa chicken and it was amazing! We left out the spice for my 10 month old baby and he liked it. My husband doesn’t like many veggies but loved the onion and sweet potatoes! Now we are just trying to decide what to try next!

    1. I agree , but I do wish the substitutions were a bit more creative than just “sub tofu for the meat” in nearly every dish. I like tofu as much as anyone, but there are so many other plant-based protein options!

    I love your sheet pan recipes. It is not that I’m lazy but … after eating a great meal I would rather kick back with a glass of wine than spend a lot of time cleaning the kitchen. These one pan dishes make it a lot easier. I have made four of the recipes listed and a couple variations using vegetables from my garden. I find it amusing to think of my growth as a chef the past few years. Your website has introduced me to ingredients, spices and herbs I had never tried before. Now you have me thinking about cooking a great meal and not having a big mess to clean up. Thanks for sharing your recipes and thanks for the inspiration.
