Perhaps it’s a good thing Thanksgiving only happens once a year.  This decadent Turkey Grilled Cheese sandwich with cranberry mustard might be a little over the top, but once a year, it seems . . . . reasonable, doesn’t it? The perfect way to use up all your leftover turkey!

To make the Cranberry Mostarda, simply mix cranberry sauce with whole grain mustard! It’s delicious!

Use what cheese you have on hand. I happened to have brie, but any meltable cheese you like will taste good here. White cheddar, gruyere, mozzarella,  swiss, etc.

On the homefront: In the coming weeks, our life will get crazy once more with all the holiday catering and events. In some ways, I almost dread this time of year, because for me it’s fraught with worries and anxieties about work.

In the end, it always turns out, but still I manage to get myself all wound up about it. I want everything to be good, and perfect of course. 🙂

So this week feels like the calm before the storm. I’m trying to soak up the little moments as I can. Early mornings spent fireside.  Sunlight.  Brisk walks. Twinkling stars. Focusing on the good things, the amazing things really, that I normally don’t give a second thought to. Like breathing.

So here’s to breathing. To being alive today. To get to experience one more day of this thrilling roller coaster ride with all its beauty, magic, frustration and heartache.

Cranberry Mustard is easy to make. Put everything in a bowl and stir.

And Voila!

Cranberry Mustard tastes quite good with anything rich, meaty or gamey.

Layer the bread, turkey, cheese, and a generous helping of cranberry mustard and a few leaves of thyme.

Pan-sear in a skillet on each side in a mixture of butter and oil, until perfectly golden.
TIP:  Finish the sandwich in a warm oven until the brie is melty.
Cut and serve with a green salad.

Description

Turkey Grilled Cheese Sandwich with Cranberry Mustard – a delicious way to use leftover Thanksgiving Turkey and Cranberry Sauce!


Ingredients

Units Scale
  • 4 slices whole grain or sourdough bread
  • 48 ounces sliced turkey breast
  • 4 slices of cheese ( brie, white cheddar, gruyere, swiss or any other meltable favorite! )
  • 4 tablespoons cranberry mustard
  • 2 tablespoons butter

Cranberry Mustard:


Instructions

Preheat oven to 400F

Stir the cranberry sauce and mustard  together.

Spread some cranberry mustard generously on all 4 slices of bread. Layer 2 slices of bread with turkey and brie, then top with the other slice.

Heat butter on medium low heat and pan-sear the sandwiches,  until crispy and golden on both sides. Place on a sheet pan and finish in the oven until the cheese is melty.

Cut in half and serve with a salad.

  1. Thanks for a great Thanksgiving leftover recipe. So good! Added mustard 1 Tbsp at a time and used only two. Melty brie elevates any grilled cheese in my book and this was so tasty with the cranberry mustard. Will definitely make again.






  2. I tried this yesterday and was astounded at how good it was. My cranberry sauce was the kind with oranges in it, so I tasted the cranberry mustard before committing it to the sandwiches. I loved it. My husband loved it. I keep cranberries on hand all year round, so we won’t have to wait till next Thanksgiving to have this again!

  4. Very good result! Only change I would make is to grill the sandwich until the cheese melts in a covered pan on the range. Works for me because I make only one or two sandwiches at a time.

    1. Hi Rachel….the cranberries are turned into a flavorful mustard. The creaminess is from melty brie. Together, it’s pretty delicious. You could just mix cranberry sauce and whole grain mustard to get the same effect. 🙂

      1. Thanks for the fast reply! I did try making it and I crushed the cranberries manually with a slotted spoon while they were cooking. The end result seemed okay except my husband said it was bitter so we are letting it sit in the fridge overnight in hopes that it just needed more time to settle. I hope it’s no longer bitter now and/or doesn’t require more sugar!

  10. Delicious! I made about 1/4 of the recipe for a party – the spread was roasted garlic + pumpkin hummus, raw and roasted vegetables, and some pickles. It was perfect! Everyone loved it. I’ll definitely be making it again, at full scale, for my next holiday bash and to keep as a staple at home. Thanks again – it’s a keeper in my household!
