We love taking classic cocktails, like a Gimlet, and putting our own spin on it! This Meyer Lemon Gimlet with Thyme Simple Syrup is slightly like “grown-up lemonade”. It’s made with gin (or vodka), freshly squeezed Meyer lemons, and a thyme-infused simple syrup.

It’s a refreshing cocktail, that can be served any time of year!

It has easily become one of my favorites.  Shake it up with ice, strain and serve it up in two glasses and enjoy it with a friend. The thyme can easily be substituted with rosemary, basil or even sage. The gin, can be replaced with vodka.

Ingredients in a Gimlet

  • gin or vodka
  • fresh lemon juice- Meyer lemons are nice here!
  • sugar- or substitute honey
  • thyme sprigs- optional. Or sub rosemary or sage.

How to Make a Gimlet Cocktail

  1. Make the simple syrup ( you can do this ahead)
  2. Fill a shaker with ice.
  3. Add gin, lemon juice and simple syrup and shake well.
  4. Strain into a martini glass.
  5. Garnish with lemon

Description

A classic gimlet consists of gin (or vodka), lemon and sugar. We take our gimlet to the next level with Meyer lemons and a thyme-infused simple syrup.


Ingredients

Units Scale
  • 4 oz gin
  • 1.5 oz Meyer lemon juice
  • 1.5 oz thyme simple syrup ( or plain simple syrup)
Thyme simple syrup:
  • 1/2 cup Water
  • 1/2 cup sugar
  • handful thyme sprigs

Instructions

To make simple syrup, bring sugar, water and thyme to a low simmer in a small pot over medium heat. Stir until sugar is dissolved. Let sit 30 minutes or overnight for a more intense flavor. Strain. Cool.
In a cocktail shaker add ice, gin, meyer lemon juice and simple syrup. Shake well. Pour into two small chilled glasses and garnish with sliced Meyer lemons or zest. Serve immediately.

  1. Love it! Also great with Vodka. I don’t tend to like really sweet drinks, so I made it with just one oz. of syrup instead of 1.5 Oz.
    I will be having a large group over for Easter and will definitely be serving this delicious drink. Thank you for the recipe!!!






  2. Sylvia, you always come through with the best ideas.What are the chances that I felt like a drink…which is rather rare for me, AND I have all the ingredients on hand. And not just any drink…a really astounding one of course. The only gin I have is Bombay Sapphire…will this alter the result a lot?

  3. We had a tree full of Meyer Lemons, but didn’t have gin or vodka — so we substituted with Blanco tequila and it was quite tasty!! Cheers!!
